Pineapple Ginger Salsa

Pineapple Ginger Salsa

This is one of Chef Lynn Mounce's favorite summer appetizers.


One pineapple

One fourth cup fresh lime juice

One fourth cup sugar

Two tablespoons finely chopped fresh ginger

Three tablespoons chopped cilantro

One-half cup chopped red onion 

Peel and dice pineapple into cubes, or grate, depending on whether you prefer a smooth or chunky consistency. Add lime juice, sugar and ginger. Place in saucepan and heat just to the boiling point. Let stand for about 30 minutes, or until cool. Add cilantro and red onion. Serve with tortilla chips.
