One cup vodka
One cup dried tart cherries
One-fourth cup tart cherry juice
Two tablespoons beet sugar simple syrup*
Two tablespoons triple sec
*In saucepan mix two cups Michigan beet sugar with two cups water and a pinch of sea salt. Heat to simmer and let simmer for 2 minutes. Remove from heat and cool.
For the Cherry Vodka:
Combine dried cherries with vodka in a non-reactive container; let steep four hours or overnight. Strain. Reserve a few soaked cherries for garnish.
For the Cosmo:
Mix one-fourth cup of the cherry vodka (reserve remainder for other uses) with cherry juice concentrate, trip sec and beet sugar simple syrup with ice in a shaker.
